Kolossi Castle, near Limassol in Cyprus, is a well-preserved medieval fortress originally built by the Knights Hospitaller in the early 13th century and rebuilt in its current form in 1454 under the command of Louis de Magnac. The castle served as the Grand Commandery of the Knights of St. John and briefly came under the Knights Templar in the early 14th century before returning to the Hospitallers.

Its strategic location and robust Gothic military architecture, including a three-story square keep and surrounding bailey, made it a key defensive stronghold. The castle is historically significant for its role in the Crusader era and its connection to Cyprus’s medieval sugar industry and winemaking, especially the famous Commandaria wine, known as one of the oldest named wines still produced today.

Adjacent to the castle are ruins of a 14th-century sugar mill linked to the Knights' sugarcane production. Visiters can explore the castle’s defensive features, including narrow windows for archers and crenellated battlements, and enjoy panoramic views of the surrounding fertile plains once rich with vineyards and olive groves. Kolossi Castle offers a direct glimpse into medieval military life and the economic history of Cyprus during the Crusades.
